To have a quick meal, you can prepare the soup in advance and freeze it.
Ingredients 400g chopped tomatoes 200g tomato passata 1-2 teaspoons vegetable stock powder 1 red onion finely chopped1 redpepper deseeded and diced l2 courgettes diced 200g sweet potatoes peeled and diced 50g frozen peas 1 teaspoon fresh basil chopped and leaves for garnishing.
Preparation To prepare sweet potato and pepper soup, place the chopped tomatoes, passata and stock powder in a large saucepan. Add the remaining vegetables and the boiling water.
Simmer gently for 20 minutes. Stir in the chopped basil, pour into bowls, garnish with basil and serve.
