Make your own sweet potato and pepper soup

THIS colorful soup, thickened with potato, is high in fiber, making it nutritious. Some of the benefits of fiber include keeping the intestinal walls and colon clean, regulating bowel movements and helping to rid the body of harmful cholesterol.

THIS colorful soup, thickened with potato, is high in fiber, making it nutritious. Some of the benefits of fiber include keeping the intestinal walls and colon clean, regulating bowel movements and helping to rid the body of harmful cholesterol.

To have a quick meal, you can prepare the soup in advance and freeze it.

Ingredients
400g chopped tomatoes
200g tomato passata
1-2 teaspoons vegetable stock powder
1 red onion finely chopped1 redpepper deseeded and diced
l2 courgettes diced
200g sweet potatoes peeled and diced
50g frozen peas
1 teaspoon fresh basil chopped and leaves for garnishing.

Preparation
To prepare sweet potato and pepper soup, place the chopped tomatoes, passata and stock powder in a large saucepan. Add the remaining vegetables and the boiling water.

Simmer gently for 20 minutes. Stir in the chopped basil, pour into bowls, garnish with basil and serve.
