Method Fry the onions and garlic for 3-5 minutes. ldd leek, carrots and stir for 2-3 minutes. Add stock and boil until vegetables are tender.
Add pepper and salt and set aside to cool. Peel and cut the avocado into reasonable pieces. Put in a blender and add a mixture of stock and vegetables. Crush until smooth, and stir in yoghurt.
Pour in a bowl and garnish with sour cream and coriander. Refrigerate and serve cold.
