Despite its unattractive looks, crayfish is a delicacy that hoteliers in Kabale are making a kill of. Crayfish in abundant in lake Bunyonyi, one of Africa’s deepest and scenic lakes located in the area.
According to Ivan Batuma, the proprietor of Overland Camp, a resort at the shores of the lake, tourists devour crayfish with relish. The camp’s chef, Jackson Kabanza says crayfish can be prepared into many dishes.
“It can be boiled and the white flesh inside sucked out with the mouth,’’ he says. Crayfish masala is made by frying the flesh with, onions, garlic, green pepper, and tomatoes. A small amount of water is then added. The resulting sh3500 dish has a mouth watering aroma.
The locals use basket like traps called entukuru to yank out crayfish from Lake Bunyonyi.
Each crayfish is sold for sh20. Most Bakiga do not eat it. Next time you go to Lake Bunyonyi, try it out. I did.
