THE meals many people have been longing for are finally here. Santos on Kampala Road, opposite Zipper, has introduced special diet dishes. Rather than put on flesh from an unfortunate part of the body to another, try the delicious diet dishes and kiss bulges goodbye.
“Do not waste money on diet fads and slimming aids, the dishes will solve your weight problem,†Ali Mroue, the manager of Santos, says. He adds that the dishes conform to the recommendations or dietary ‘goals’, which encourage more healthy eating.
Dietary goals were first published by the National Advisory Committee on Nutrition Education (NACNE) in Britain in 1983. Eight years later, the goals were highlighted in the government Green Paper on health. Eating less fat is one of the key issues in the dietary goals.
“We do not use oils or fats for cooking diet dishes,†says Mroue. “The dishes are steamed, grilled or boiled. They are spiced with garlic, ginger, salt and lemon.â€
Research shows that food containing fats can increase the risk of heart disease. “Diets, which contain a large proportion of saturated fatty acids may lead to high cholesterol levels, a common cause of heart disease,†says Dr. Bernard Musoke, a nutritionist.
The diet dishes come in two types: diet fish and diet chicken. And why fish and poultry? “These contain less fat than red meat,†says Mroue. “The fatty meals cause a variety of nutritional disorders including heart disease and obesity.â€
Diet chicken is chicken breast served with steamed vegetables and soda water. “The breast contains less fat. Its fatty skin is also removed,†says Mroue.
Diet fish is grilled and served with vegetables and soda water. “The fish is grilled without oil and spiced with garlic, lemon and coriander,†says Mroue. The diet dishes are served with steamed vegetables including potatoes, carrots, green peas and green cauliflower. Customers may add lemon or pepper to the food. The vegetables contain vitamins and fibres. According to NACNE, adults should eat 30 grammes of dietary fibres per day. This can be obtained from foods such as vegetables. Fibres help to prevent intestinal disorder. Diet dishes are suitable for people who are overweight, diabetic as well as those with high blood pressure. They are also good for people who do not want to gain too much weight. A diet dish costs sh6,000. It takes 10 minutes to 15 minutes to prepare and serve the meal. Mroue says they serve food on time so that nobody is anxious about being late and no one has to eat hurriedly. “This is a welcome change from the fatty fast foods,†says 28-year-old Eve Namukasa.
“I now eat delicious food without worrying about my weight. I’m happy about the diet dishes. Besides, the waiters and waitresses at Santos are smart, friendly and fast.â€
How did Mroue conceive the notion of diet dishes?
“I came up with the idea in 1990. My father was diabetic. I was advised to feed him on low fat dishes. I prepared diet dishes, which I introduced in our branch in Valencia, Spain. They became very popular with our customersâ€.
Mroue began his catering career at the first Santos restaurant in Valencia 15 years ago. This year, he opened the first Santos branch in Kampala. Other branches are in Cairo and Beirut.
Many people now relax and enjoy his services and products in the delightful restaurant. Mroue intends to introduce the first diet ice cream in Uganda soon.
“The diet dishes are healthy,†says Dr. Musoke.
“It is recommended that the amount of energy obtained from fat should be reduced from 38% to 30%. This lowers the level of cholesterol in the blood and therefore helps to reduce the risk of heart disease.†Santos opens at 9:00am.
The last orders for meals are taken at 10:00pm. Between these hours, one can have Santos special juice or ice cream. “The price of the dishes may seem high, but then the quality of meals and services is high too,†says Mroue. “Come and do justice to the food which has been prepared skillfully and carefully.â€
