WHEN considering dessert, many people quickly think of fruits and juice, forgetting that mousse is a nutritious and excellent form of dessert.
Mango mousse is one kind worth trying out in your kitchen.
The good news is that with the good season we have had, markets are flooded with mangoes at pocket-friendly prices.
Besides being tasty and filling, the mousse has a high content of vitamin C from mangoes, lemon and is a good source of proteins.
Ingredients
Mangoes, 2 medium
Icing sugar -75g
Lime or lemon juice - 2 tablespoons
Double cream, whipped -300ml
2 teaspoons gelatine soaked in 2 teaspoons of cold water
Lime or lemon twist to decorate
Procedure
Cut the mangoes in half lengthways, scrape out the flesh and place in a food processor or blender
Add the icing sugar and lime or lemon juice and crash until smooth
Alternatively, work the mango through the sieve then stir in the juice and sugar
Heat the gelatine gently until dissolved.
Cool slightly and mix into the mango puree with the whipped cream
Pour into individual glass bowl and leave to set
Decorate with lime or lemon twist
