IT is a vegetable season! Walking into the market, you are welcomed by Cetalla asiatica, a vegetable popularly known as katunkuma. One can purchase a packet of katunkuma for as little as sh200. Umar Mutuya, a nutritionist working with Diet Plus on Clement Hill says: “Though most people detest eating katunkuma because of its bitter taste, it is very nutritious.â€
Mutuya adds that katunkuma can be eaten in a variety of ways. Some people prefer to chew it raw, boiled and others crash it to make juice.
David Ssali, a naturopathic doctor says: “Katunkuma, when chewed raw, helps give fresh breath because it is alkaline and helps in cleansing the body.â€
Ssali explains that before chewing katunkuma, one has to wash it thoroughly. He adds that you should chew it in the morning, just after waking up.
Apart from chewing katunkuma raw, one can also crash it when raw and add a little water to make juice. Katunkuma juice is recommended for people with high blood pressure.
Gorret Namwanje, an elderly woman staying in Nakawa says, katunkuma can be wrapped in banana leaves, steamed on top of other foods and eaten as a side dish.
Mutuya adds that one can process katunkuma and get powder that is eaten instantly.
Procedure
-Remove the stocks -Wash it in clean water -Put it in a saucepan, add water and boil until it gets soft. -Spread the boiled katunkuma under the sun to dry thoroughly
-Pound the dried katunkuma in a mortar to form a powder. -Store the powder in a dry container -Sprinkle in a bowl of soup and eat instantly.
