DO you know the number of things you can do with rice? We have discovered that you can easily make rice porridge for your family if you process the rice into rice flour.
John Kavuma, a production manager with Nice Premier Foods in Kawuku Entebbe, says rice flour is very nutritious for both the old and the young. It is a good source of carbohydrates and iron. However, he cautions that it should be consumed by babies of six months and above.
Kavuma explains how one can convert rice into rice flour:
-Buy super rice (the type grown in eastern Uganda).
-Winnow the rice to remove husks and dirt.
-Sort the rice to remove stones
-Using a rice grinding mill grind the rice to fine flour (the maize grinding mills can also do)
-Store the flour in cool dry place. When preparing porridge kavuma explains that one has got to follow this procedure:
Procedure -Mix the flour in cold water to form a paste.
-Add the paste to boiling water and stir
-Leave it to boil for about ten (10) minutes.
-Add milk and sugar to taste. You can also make rice balls. This snack is easy to make:
Recipe -Boil the rice. -When it is ready, put it a side to cool
-Roll the cooked rice into balls. -Dip the balls in a batter made from wheat flour mixed in cold-water and spiced with curry powder to change colour.
-Deep-fry the rice balls until they turn golden brown.
