Make ghee at home

GOOD GHEE is hard to find on the market. However, you can make your own ghee at home using the cream from your milk. Robinah Kyomugisha, the manager Consortium Diary in Bugolobi, says: “Some people do not like eating milk cream and instead throw it away.”

GOOD GHEE is hard to find on the market. However, you can make your own ghee at home using the cream from your milk. Robinah Kyomugisha, the manager Consortium Diary in Bugolobi, says: “Some people do not like eating milk cream and instead throw it away.” Kyomugisha advises that instead of throwing the cream away, you can turn it into ghee for your family.

Richard Kiviiri, a nutritionist with Healthy Snack at Garden City, says ghee is lactose free and is made from natural milk proteins.

Kyomugisha explains how you can convert the cream into ghee:

Procedure
-Boil your milk and set it aside to cool.
- Remove the thick cream that forms on top of the milk.
- Put it in a clean small jerrycan, container or in a gourd (commonly known as ekishabo in Runyankole)

- Continue collecting the cream for about 2-3 days depending on the quantity of milk and add it to that in the container.

- Add a few drops of stale milk or yogurt to the cream in the container and leave it to stay over a night.

- In the morning, churn/ shake the cream container vigorously for about thirty minutes until ghee starts to solidify, separating itself from the milky substance.

- Pour the liquid away and remain with the solid ghee.
- Remove the ghee from the container and wash it with clean cold water to remove unwanted substances, especially the watery milk.

- Store the ghee in a clean container, preferably in a type of gourd known as ensimbo in Runyankole, for about a week.
- Boil the ghee over a gentle fire and put it aside to cool.

- Sieve the ghee to remove dirty particles.
- Pour it into a plastic container, leave it to solidify and keep it in a freezer.

Recipe
Kyomugisha explains that you can eat the ghee instantly by adding it to the sauce directly in your bowl or you can use it to fry sauce or any foodstuff, instead of cooking oil.
