Iguana’s fish fingers and beef burger

THIS week, Food Guide ventured into the pleasantries of making 20 minute dishes with minimum ingredients. We met with Chef Dan Mutebi of Iguana Bar and Grill at Kisementi in Kamwokya, a Kampala surburb.

He took us through the preparation of fish fingers and a beef burger
while using basic vegetable and meats. It is simple to make these dishes as a fast food treat for a family of five. Making Fish fingers Cut the tilapia fillet slices into a thin julienne style and sprinkle the whole lemon over them and add salt, white pepper and Royco.

As you mix the ingredients, spread some baking flour on a plate and rub the fish in it as you beat 3 whole eggs on another plate. Dip the fish fingers into the egg mixture until they are fully soaked and then add bread crumbs over them.

Proceed by deep frying the fish fingers into a pan of oil or in a deep frying machine for at least 10 minutes and they ready to eat. In the continental setting, the best way to enjoy fish fingers is with tartar sauce.

Tartar sauce is derived from a mixture of 5 major ingredients, applied in any order of choice. The ingredients comprise of chopped onions, parsley, mayonnaise, sugar and vinegar.

Make the tartar sauce separately in a small bowl and serve it alongside the fish fingers. The tartar sauce
shouldn’t be too thick but should be white in colour and pleasant. Average time 15minutes. Making a beef burger Commence by fine chopping the onions and Dhania and mixing them with black pepper, Royco, baking flour, salt to taste and mix them with minced meat. And using your fingers, rub together until it forms a circular mound and leave to settle.

Make as many as you want depending on how many people you are cooking for. With a pan on fire, cook the minced
meat until it browns on both ends.

When the minced meatis ready, arrange the buns that you are going to use in the beef burger by slicing them through and smearing margarine on one side and mustard with mayonnaise on another.

Once that is done, place thin slices of cucumber, tomato, lettuce and onion rings before you place the minced meat in the middle.

Cover the meat with another slice of lettuce, onion rings and serve

Average time-to prepare the snack is 15minutes.
