Buying tips
Mai Nakitende, a specialist in roasting gonja in Namuwongo market, says you can decide to choose the ripe or the half ripe depending on your preference and the type of snack you are going to make. However, whether hard, soft or blemished, Nakitende explains, gonja still remains good to eat. She advises that you can buy half ripe gonja and keep it in a cool dry place and within a few days it would have ripened. You can keep the ripe gonja in a refrigerator.

Richard Ssenviiri, a nutritionist with Healthy Snack at Garden City, says gonja is very high in beta-carotene and calcium and also provides ascorbic acid and vitamin K. Below are the different recipes you can make out of gonja.Roasted gonja

Roasted gonja
-Peel the ripe or half ripe Ggonja depending on your choice.
-Place the grilling mesh on a charcoal stove with gentle fire

-Place the Ggonja on a grilling mesh (one commonly used for roasting meat)
-Keep turning the Ggonja to ensure it does not burn.

Oven grilled gonja
-Alternatively you can have your Ggonja wrapped in foil paper and grilled in an oven at moderate temperature.

Steamed gonja
Nakitende explains that alternatively, you can have your gonja steamed in banana leaves and eaten as a side dish. To steam the gonja follow the procedure below:

-Wash it with clean water.
-Cut off tips and stalks from both ends.
-Steam it in banana leaves without peeling it. However, for this recipe Nakitende says, you will require ripe gonja.

Deep fried gonja
Ssenviiri explains that ripe gonja can also be coated with eggs and breadcrumbs and deep-fried to make a tasty side dish.

Gonja crisps
He adds that raw or firm gonja can be used to make crisps, a snack that is enjoyed most by children. All you need to do is to peel the gonja, cut it into thin slices vertically and deep-fry it in hot cooking oil.
