Make your own barbecue

AFTER two men were arrested in Kalerwe for slaughtering a dog with intent of selling it as mchomo; many people are now scared to eat roast meat from public places. Despite dog meat being on sale, roasted meat is still popular, especially when it is spiced with tomatoes and pepper.

How about making your own barbecue at home? This would make it even more exciting and tastier, since you would have a choice over which sauces to flavour it with and you would be sure of what you are eating.

With barbecue, even men who consider the kitchen a no-go area will turn into family chefs!

Ingredients and preparation of Barbecue Sauce for Red and White Meat:
Pour 2 cups of crushed tomatoes into a dish. Add a can of beer (or water)
2 spoons of mustard
¼ cup Worcestershire sauce
¼ cup brown sugar
¼ cup cider vinegar, ¼ cup orange juice
1 tablespoon vegetable cooking oil
1 teaspoon dried oregano,
2 garlic cloves and black pepper.

Boil the mixture over a gentle fire.
Cook the tomatoes until ready.

Reduce the heat to simmer the sauce.
Uncover the sauce, for 40 minutes. If the sauce is too thick, add little water or beer.

Remove from the fire and pour into a blender and process it until smooth. Taste and add a little more salt if needed.

Serving
Sprinkle this sauce over the meat when it is about half-ready. If you are using a charcoal grill, you should scatter the fire so that the heat is not so intense to char the sauce.

If using an oven, reduce the temperature to 325 degrees celcius. Cover the meat in the grill or with banana leaves on the charcoal stove and leave it for 15-20 minutes.

Only then will the meat taste great. Barbecue is often served with chips.

Barbecue Sauce for White Meat
Get a medium saucepan, combine a can of beer (or water)with a ½ cup of robust molasses

2 tablespoons cider vinegar
2 tablespoons spicy brown mustard
1 teaspoon ground allspice
1 or 2 minced cloves garlic

½ teaspoon dried thyme
½ teaspoon salt and ground black pepper add to sauce and simmer.
