Drumsticks for vegeterians: A cholesterol-free dish

YOU really want to eat chicken but you are afraid of cholesterol. Or, are you a vegetarian? Now you can smile all the way to the dining room. Reason - you can now eat vegetarian chicken drumsticks.

Vegetarian drumsticks are a nutritious dish which mainly supplies high quality proteins. The dish is recommended for the transition diet towards healthy eating habits based on vegetables.

To make gluten, one of the ingredients, use wheat flour with high gluten content. Mix the flour with a small amount of water and vegetable broth to form a ball, knead and leave the mixture to set in a bowl covered with lukewarm water.

Wash the dough in either cold or lukewarm water to remove the starch and bran.

Cook it in vegetable broth and soy sauce for 60 minutes on a gentle fire.

Ingredients for the recipe
500g gluten (without boiling)
Two eggs
80g of flour
50g of bread crumbs
Two garlic cloves
Two litres unsalted vegetable broth
Parsley
Sea salt

Preparation
Peel and grind the garlic in the mortar together with the salt and the potherbs

Beat the eggs and mix with the ground ingredients and the flour, let it rest

Shape the gluten to resemble chicken drumsticks. Do this around wooden sticks

Boil the drumsticks in the vegetable broth for about 30 minutes

Remove the drumsticks and drain excess water

Coat the drumsticks with eggs and breadcrumbs. Bake until golden brown

Serve immediately
