Sam’s Restaurant will serve roast turkey with thyme and bread stuffing. Recipes:Turkey (6kgs), 675 gms thyme and bread stuffing, 125gms melted butter, salt and pepper.
Preparation: Rub the turkey inside and out with salt and pepper. Fill the cavities with the stuffing, then secure with string or skewers. Put the turkey on a large roasting pan and brush all over with melted butter.
Put into the oven preheated to temperatures of up to 230 degrees centigrade or gas (mark 8) and roast for 10 minutes.
Reduce the oven temperature to warm (170 degrees centigrade or gas mark 3) and continue to roast for three-four hours or until the turkey is cooked through. Baste frequently with the fat in the pan during the cooking period.
Best served with roasted Irish potatoes, vegetables, gravy and cran berry sauce. Serves 12 people.
