<b>Kale (Sukuma Wiki)</b><br>It is one of the most consumed and cheap green vegetable in both urban and rural areas of East Africa. Kale is easy to produce and if sufficiently nourished with compost manure and if well watered, it produces huge volumes of leaves, which can be harvested repeatedly.

Kale is easy to produce and if sufficiently nourished with compost manure and if well watered, it produces huge volumes of leaves, which can be harvested repeatedly. Kale is a good source of vitamins A, B6 and C, manganese, copper, calcium, potassium, calcium and dietary fibre.

Spinach
Is a relatively easy-to- produce vegetable. Some people may not like spinach due to its ‘flat’ taste after cooking. Spinach still has a large nutritional value, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamins A, C, E, K, magnesium and antioxidants. It is good for expectant mothers and children. Spinach is best when steamed.

Amaranthus Commonly known as doodo, grows in open fields. The protein found in young plants is important for people without access to other sources of protein. Grain amaranth is recommended for infants because of its protein digestibility and retention by a baby’s body system.
