HAVING an Indian themed dinner at
home is a thought that has crossed
many people’s minds, given its growing
popularity.

However, such people have kept that thought at bay as a result of the complications in spicing, the choice of dish and how to prepare it.

This week, Food Guide visited Kyber Pass Indian kitchen at Speke Hotel in Kampala and watched chef B N Panda prepare chicken badami with steamed rice.

Chicken badami is a North Indian specialty dish that entails preparing tender chicken cubes (boneless) in white cashew nut and cream-based gravy.

It is a rich dish; plush with nutrients and is served mild. It does not demand a lot of work and can be prepared in 40 minutes.
