Make your own mushroom soup

<b>Ingredients</b><br>7 tablespoons of vegetable oil or <br>olive oil<br>2 garlic cloves crushed<br>500g of fresh mushrooms<br>2 tomatoes skinned and chopped<br>2 small onions chopped<br>750ml of vegetable broth<br>Salt

Ingredients

olive oil
2 garlic cloves crushed
500g of fresh mushrooms
2 tomatoes skinned and chopped
2 small onions chopped
750ml of vegetable broth
Salt


Heat the oil in a sauce pan
Add onions, garlic until golden brown
Add tomatoes and stir until tender. Add mushrooms and season
Add the vegetable broth, salt to taste.
Cover and bring to boil, lower the heat, simmer for 15 minutes and serve hot.

Why mushrooms?
Most people love mushrooms for their aroma. However, they also have a high nutrition and medicinal value.

David Ssali, a naturopathic doctor with Dama Medical Herbs says, mushrooms are a good source of insoluble fibre, among other nutrients.

He says that the low fat insoluble fibre found in fresh mushrooms has anti-cancer properties, promotes bowel health, lowers cholesterol levels and reduces the risk of heart disease, diabetes and colon cancer.
