BEEF brochettes are a delicious all-in-one dinner, packed with the powerful protein provided by lean beef along with the goodness of grains and grilled vegetables.
Below Chef Dan Baidhu with the Norwegian Embassy, takes us through the procedure of preparing beef brochettes.
Ingredients (4 servings)
2 cloves garlic, crushed
2 spring onions, sliced
50 ml fresh coriander, minced
1 lemon
1 lemon, rind and juice
25 ml mild curry paste
18 ml olive oil
15 ml ginger, minced
1 pinch salt
500g beef cut in 1-inch cubes
250 ml whole wheat couscous
1 sweet red pepper cut into 1-1/2 inch chunks
1 green pepper cut into 1-1/2 inch chunks
25 ml plain yogurt
Preparation:
Marinating —15 minutes; to cook — 10 minutes
Combine 125ml water, garlic, spring onions, coriander, lemon rind and juice, curry paste, olive oil, ginger and salt. Set aside
In a large sealable freezer bag, toss beef with remaining mixture; refrigerate for 15 minutes
Thread beef and pepper chunks onto skewers
Grill or broil brochettes using medium-high heat for five minutes on each side or until medium-rare
Stir the remaining reserved dressing into yogurt for dipping sauce.
Serve grilled brochettes with couscous and dipping sauce
