VEGETABLE Biryani is simply vegetable rice prepared using lots of spices. We talked to Chef Vinod Dhundial of Pavement Tandoori Kisementi on Cooper Road and below he takes us through the procedure.

VEGETABLE Biryani is simply vegetable rice prepared using lots of spices. We talked to Chef Vinod Dhundial of Pavement Tandoori Kisementi on Cooper Road and below he takes us through the procedure.

Ingredients
Carrots - 25g
French beans - 25g
Chopped mint and coriander leaves - 20gm
Half boiled rice - 100gm
Sliced tomatoes - 15gm
Fresh milk cream mixed with saffron herbs - 5ml
Butter - 5gm
Vegetable oil - 50ml
Yoghurt - 5ml
Ginger garlic paste - 1 teaspoon
Coriander powder -1 teaspoon
Cumin powder - 1 teaspoon
Spices: cinnamon, cardamom, bay leaves -5gm
Salt to taste

Method
To prepare vegetable Biryani, take a thick saucepan, heat the oil and add whole spices and onions stir until brown.

Add tomatoes, powder spices, yoghurt, vegetables, green leaves, water and half boiled rice. Cover with a tight fitting lead, cook for 5 minutes and serve.
