MANY people enjoy Jack fruit, but surprisingly, they throw away the seeds that could make a good snack.
Norah Nakaazi, an elderly woman in Kyebando, a Kampala suburb, says Jack fruit seeds are tasty when roasted.
Nakaazi says after eating the pulp, she removes the sack-like cover that encloses the seed and roasts the seeds in a saucepan placed in hot ash or bakes them in an oven.
When ready the hard white cover begins to peel off. Julius Muhimbo, the production manager of Nutritious Foods, says the seeds are rich in Vitamin B1, B2 and starch. He says when dried and processed, the seeds make a tasty beverage.

Wash the seeds in clean water
Dry in the sun and remove the cover
Roast until golden brown
Pound or grind to powder and use as a beverage.
